Compare pizza oven decks, heat and recovery

Compare usable opening, stone, heat source, monitoring and batch recovery

Maximum temperature is a poor comparison by itself. Follow heat from burner, flame or element into the deck and chamber, then ask how the oven is read, adjusted and allowed to recover between launches in the expected weather.

Deck

Compare usable stone and mouth geometry

The Gozney Arc XL is designed around a twenty-millimeter stone and a pizza up to sixteen inches, with more turning room than a compact twelve-inch branch. Opening height and pan handles can still limit cookware before the nominal deck area does.

Thickness affects more than preheat
A heavier stone can store more heat but may take longer to establish a stable condition. Material, insulation, burner balance and load all shape recovery.
One deck remains one working surface
A wider stone can support a larger pizza or more maneuvering room, but simultaneous items still compete for heat and operator access.

Heat

Separate maximum, preheat and bake claims

A 950-degree maximum, rapid heat-up statement and short pizza claim describe different tests. Ambient temperature, wind, fuel pressure, dough moisture, topping load, launch time and burner setting can change all three.

Read the instrument location
A built-in display may read chamber or a fixed sensor point. An infrared thermometer reads a patch of deck. Neither proves uniform top heat or complete food doneness.
Watch the flame pattern
Lateral, rear and under-deck burners create different turning and control routines. Compare the routine, not only the total burner rating.

Recovery

Test the intended sequence

Run the planned pizza size and interval, recording deck position, launch, turns, burner adjustment and time before the next load. No retained manufacturer rate guarantees pizzas per hour under household conditions.

Wind changes the test
Wind can alter flame behavior, opening losses and surface readings. Use the oven only within the maker's weather and placement limits rather than shielding it with an unsafe enclosure.
Price the whole package
Confirm regulator or burner, peel, turning tool, thermometer, cover, table, fuel, cylinder or electrical arrangement and replacement-stone support.
