Choose the fire
Fuel, attention, flavor and high-heat behavior decide the cooker familyPellet, manual charcoal, automatic gravity charcoal and kamado systems can all make excellent food. They ask for different operator attention and create different smoke, heat and maintenance.

Pellet
Convenience comes from electricity and an auger
A controller meters pellets into a small fire. It holds temperature well but adds igniters, fans, sensors, motors and a lighter smoke profile than many charcoal fires.

A kamado or manual charcoal cooker rewards fire management and can move from low smoking to intense direct heat. Shutdown and temperature changes take time.

Gravity systems combine charcoal character with digital regulation. Switches, probes, fans and seals operate in a hot, greasy environment.
