Liquids, bags and the actual workflow
Use chamber pressure deliberately for wet food, infusions and packagingA chamber lowers pressure around the whole pouch, so liquids do not rush toward the seal as they do in an external suction machine. Liquids can still boil as pressure falls, and every recipe needs a controlled program and clean seal.

Wet food
Watch the product, not only the gauge
Soups, sauces and marinades can boil at room temperature under vacuum. Cooling the food and stopping before a surge protects the seal and pump area.

- Follow safe food-handling temperatures before sealing.
- Program
- Use liquid control or a staged cycle when the machine provides it.

Pouches
Smooth chamber bags change the economics
Chamber pouches are inexpensive and available in different thicknesses and barrier materials. The bag opening must fit the seal bar and the product must fit the chamber.
- Size
- Stock a small set of sizes tied to actual portions.
- Material
- Match storage, cook temperature and oxygen barrier needs.

Other uses
Jars and infusions need machine-specific limits
A tall chamber can support jars, rapid marination and compression, but lid clearance and pressure behavior vary.
- Verify
- Follow the manufacturer for jars and rigid containers.
- Clean
- Use inserts or trays and clean spills before the next cycle.
